Malaysian Chicken Curry Recipe
serves 4


  • 2 stalks lemongrass, sliced
  • Four cloves garlic, minced
  • 2 shallots, peeled and chopped
  • 1 tablespoon freshly minced ginger
  • 1-2 Thai chilis, sliced
  • 2 tablespoon curry powder
  • half teaspoon floor tumeric
  • half teaspoon Chinese crushed chili or crushed crimson pepper flakes
  • Four tablespoons oil, divided
  • eight rooster thighs
  • 3-Four small potatoes, peeled and quartered
  • 1 cinnamon stick
  • 2 star anise
  • 5 kaffir lime leaves
  • 1.5 cups coconut milk
  • half cup rooster inventory
  • 1 tablespoon fish sauce
  • 2 teaspoons gentle brown sugar

Crush lemongrass, garlic, shallots, ginger, and Thai chilis in a mortar and pestle till it resembles a paste. Alternatively, you’ll be able to blitz this in your meals processor. Stir in curry powder, turmeric, crushed chili flakes, and a couple of tablespoons oil.

Coat rooster throughly with the curry paste and let marinate for 30 minutes.

In a big dutch oven, warmth up remaining 2 tablespoons of oil and fry the rooster, pores and skin facet down, till golden. Flip the rooster pores and skin facet up and add the potatoes. Stir in coconut milk, rooster inventory, cinnamon stick, star anise, and lime leaves.

Bring to a delicate simmer and cook dinner for 1 hour, or till rooster is comfortable and tender. Season with fish sauce and brown sugar and luxuriate in!
