Meatloaf nights happen once a month in my home – my family loves it and so do I. This classic meatloaf recipe is one of my favorites, but for a twist on the classic, try these Meatloaf Foil Packets or these Bacon Topped Meatloaf with BBQ Sauce.

Sheet pan meatloaf is a winner in my book, and using Reynolds Wrap Non-Stick Foil means easy cleanup! I’m a 2020 Reynolds Wrap Ambassador once again this year and am thankful for sheet pan dinners now that I’ve been cooking at home more than ever! Don’t get me wrong, I love cooking but the amount of dishes I’ve washed these past few weeks are more than I care to. By the time dinner rolls around, we are tired, which is why I love making sheet pan dinners with Reynolds Wrap Non-Stick Foil. The individual turkey meatloaves cook with the broccoli all at the same time, so the whole meal is ready in thirty minutes. If you want to add another side, corn on the cobb would be perfect.

This meatloaf recipe is also great to make for meal prep. You can refrigerate the leftovers for a few days and reheat in the microwave when ready to eat. This recipe also doubles well if you want to make extra meatloaf to freeze for later. Just put the loaves in a freezer bag and freeze for up to three months.

I used Reynolds Wrap Non-Stick Foil which is made with a food-safe Non-Stick coating added on one side (the dull side) that makes it easy to line pans and wrap your dishes without the hassle of clean-up. No need for non-stick oils and sprays.

How do you make meatloaf from scratch?

Making delicious turkey meatloaf from scratch is super simple. You just combine all of the meatloaf ingredients into one bowl and mix well. But, make sure not to over mix! Over mixing will result in tougher meatloaf that’s not as tender.

After you mix your ingredients, shape the mixture into four small loaves and place on a baking sheet with foil. Lining your baking trays with foil will decrease the cleaning time, so don’t forget to use Reynolds Wrap Non-Stick Foil for this step!

Next, you need to make the meatloaf glaze. Don’t worry – it’s also very easy. Just mix some ketchup with Worcestershire sauce and brush onto the loaves. This glaze will make the meatloaf extra juicy and flavorful.

Variations:

  • Swap out broccoli for cauliflower or use a mix of both.
  • If you don’t have oats, use breadcrumbs instead.
  • If all you have is ground beef, that will work fine too.

To Meal Prep: Divide into four meal prep containers. Keep covered and refrigerate for three to four days. To reheat, microwave in 30-second intervals until heated through.

To Freeze: Store leftover meatloaf in a freezer bag and freeze for up to three months. Thaw in the refrigerator and reheat in the microwave.

Meatloaf:

  • 1.3 pounds (20 oz) 93% ground turkey
  • 1/3 cup quick cooking oatmeal, or gf oats
  • 6 tablespoons ketchup, divided
  • 1/3 cup minced onion
  • 1 large egg
  • 1/2 teaspoon dried or fresh thyme leaves
  • 1 teaspoon kosher salt
  • 2 teaspoons Worcesterchire sauce, divided

Vegetables:

  • 1 large bunch broccoli, (1 1/2 pounds) cut into florets
  • 2 tablespoons olive oil
  • 3/4 teaspoon kosher salt
  • Reynolds Wrap Non-Stick Foil
  • Preheat the oven to 425F. Line a 13×9-inch sheet pan with Reynolds Wrap Non-Stick Foil, dull side facing up towards food.

  • In a medium bowl toss broccoli with oil and season with 1/2 teaspoon salt and spread out on the sheet pan in a single layer on one side.

  • In a medium bowl combine ground turkey, oatmeal, 1/4 ketchup, onion, egg, 3/4 teaspoon salt, 1 teaspoon Worcesterchire sauce and thyme, mix well.

  • Divide mixture into 4 equal portions. Shape each portion into a 4 x 3 –inch free form loaf on the other side of the sheet pan.

  • In a small bowl mix remaining 2 tablespoons ketchup with remaining teaspoon of Worcesterchire sauce and brush onto loaves.

  • Bake 30 minutes in the center of the oven, turning the broccoli halfway, until meat is cooked through in the center and the broccoli is slightly charred.
